Lime Poke Cake with Pudding Frosting


              This would be a very pretty cake for St. Patty's...Not only is it pretty and festive,
            it is also tasty and incredibly easy. My daughter and her friends gobbled it right up.


               Limey and slightly sweet. The pudding frosting put it over the edge, good.
         This would be great for a Spring Pot luck or take it to a Easter get together. We eat
              with our eyes first and this is so pretty! Don't forget your colored sprinkles.
           You also can use any flavor gelatin...Strawberry, orange, lemon and raspberry.

                                               Lime Poke Cake with Pudding Frosting
       
                                                        FOR THE  CAKE -
                                                        1 package white cake mix
                                                        2 packages ( 3 ounces each ) lime gelatin
                                                        1 cup boiling water
                                                        1/2 cup cold water

                                                        TOPPING -
                                                        1 cup cold milk
                                                        1 package ( 3.4 ounces ) instant vanilla pudding
                                                        1 carton ( 8 ounces ) whipped topping
                                                        green sprinkles, optional

         1) Bake cake in a 9 by 13 greased pan. Bake according to package directions on box.
         2) Let cake cool. In a small bowl, dissolve gelatin in boiling water, stir in cold water
         and set aside.
         3) With the tip or a wooden spoon or anything small and round, poke holes about
         2 inches apart into cooled cake, Slowly pour gelatin over cake. Cover and refrigerate.
         4) In a large bowl, whisk milk and pudding for 2 minutes. (mixture will be thick).
         Fold in whipped topping. Spread over cake. Decorate with sprinkles.
