Chicken Scallopini


   What can I say about this yummy meal? To start off, it's juicy, flavorful and down right
      delicious. It's delicious served over pasta, rice but I like it best over mashed potatoes.

   Scallopini is an Italian dish consisting of thinly sliced meat dredged in flour and cooked
         in a sauce and this sauce with lemons and artichoke is the star of the meal.

                                                               Chicken Scallopini

                                                        2 pounds chicken breasts - pounded
                                                        or you can use chicken tenderloins
                                                        2 small jars marinated artichoke hearts, drained
                                                        2 lemons, 1 sliced and one halved
                                                        2 cups chicken broth
                                                        1/2 cup cooking wine or more broth
                                                        1 cup flour for dredging
                                                        4 garlic cloves, minced
                                                        olive oil
                                                        garlic powder, salt and pepper to taste

              1) Dredge chicken in flour.

              2) Cover bottom of pan in olive oil. Saute chicken 4 minutes on each side. Set on
              paper towels. You might have to cook the chicken in 2 batches. When all the -
              chicken is cooked and sitting aside. Add more oil to pan and sauté garlic then add
              broth and wine and bring to a boil. Once boil starts add chicken, artichokes and
              lemon slices. Bring to a boil again and simmer for 20 minutes.
 
              3) If you'd like a thicker sauce Remove chicken after the 20 minute boil and mix
              1 tsp of flour with enough waste to make a paste and no lumps and whisk in pan
              for one minute. Serve with a green veggie and potatoes.
