Pear and Gorgonzola Salad

I can't get enough of good salads. It's very rare that I ever just
eat a plain salad. I need it to be kicked up a few notches. Your
really going to like this. The dressing is what makes it extra
yummy. I could bottle it up and drink it.

Pear and Gorgonzola Salad

1 tablespoon of butter
2 Anjou pears, cored and cut into slices
1 tablespoon of Dijon mustard
1/4 cup of fresh lemon juice
2 tablespoons maple syrup
1/4 cup olive oil
1/2 teaspoon of salt
1/8 teaspoon of pepper
6 ounces of arugula
1 head of romaine
domestic blue cheese
1/2 cup sugared almonds
1 red onion, thinly sliced

Melt butter over medium heat in a large skillet. Add pear slices
and cook until the pears are golden but still slightly firm to the
touch about 6 minutes. Set aside. Combine the mustard, lemon
juice and maple syrup in a small bowl. Slowly whisk in olive oil.
Season with salt and pepper. Toss the arugula, romaine. blue
cheese, pecans, onion and pears together with the dressing in a
large bowl. Serve immediately.

  15. Yum! Sounds wonderful! I would have never thought to use maple syrup in a salad dressing. It's almost maple sugaring weather, so I'll be taking the kids out to the nature center for the annual trek in the woods to watch it done, and of course come home with a bottle of the good stuff. Thanks for sharing.

  16. P&G salad is my favorite. I always have my SIL make it for gatherings. She uses a champagne dressing but I will have to try this. Just looking at it makes me want to have lunch right now.

  21. Yum! I'm not much for blue cheese, but switch that to goat or feta and I'm in! Fruit really adds something special to a salad
