Maraschino and Pineapple Bread


    If you have followed my blog for awhile you know that I bake bread with my daughter
    once a week and today we made this moist and flavorful bread. Our pantry always has
    maraschino cherries in it "my kids love Shirley Temples" me too. We like to smear this
    bread with Trader Joe's organic coconut oil. It's sinfully delicious. This loaf makes two,
    so be sure to share =)

                                            Maraschino and Pineapple Bread

     4 cups all-purpose flour
     1 1/2 cups granulated sugar
     1 teaspoon baking soda
     1 teaspoon salt
     1 tablespoon vanilla extract
     1 tablespoon coconut extract
     4 eggs
     3/4 cup oil
     1 (8oz) can crushed pineapple
     1 jar maraschino cherries, drained and quartered
     2 tablespoons powdered sugar "optional"

     1) Heat oven to 325 degrees. Spray 2 - 9 by 5 loaf pans with cooking spray.
     2) In a large bowl, mix flour, granulated sugar, baking soda and salt. Add oil,
     vanilla, coconut extract, eggs, and pineapple with liquid. Beat with an electric
     mixer on low speed until combined. Fold in cherries. Divide evenly between
     pans.
     3) Bake 45 to 55 minutes. Cool for 10 minutes. Remove from pans. Cool
     completely, about 1 hour. Sprinkle with powdered sugar.

  3. This looks incredible. I don't like bananas and everyone someone bakes bread I feel like it's banana bread! This is such a nice take on something and I LOVE pineapple!

  25. Wow! This sounds amazing! I am so into baking bread loaves lately and I love recipes that make 2 loaves because I love sharing with friends. I can't wait to make this :) Oh, and what in the world is coconut oil? It sounds divine! We don't have a Trader Joe's here - but I'd love to get my hands on some - is it like a spread?

  30. OK, I think I'm being incredibly dense here. I don't understand the pineapple thing - quartered. Just use 1/4 of the can? And how many cherries do we use?

    I was going to put the ingredients I am missing on my grocery list but then I got all kinds of confused.

  31. Val this bread looks to die for amazing. I love the use of the pineapple along with the cherries. Kind of like a mixed drink with the flavors. I love it to pieces! I bet a pile of sugar coated almonds on top would make it over the top! :) Oh and your lemon fudge recipe at the bottom- MAKING IT TODAY!

  46. I made it!!! This weekend. I have printed off about 5 recipes to try of of this here blog...but this is the 1st one I have actually made. It was so so heavenly. Lots of compliments....just wish I had grabbed the organic coconut oil!!!! Thanks for inspiring.

  50. Only one question, what size pans? I've guessed 8x4's and had batter all over the place, or guessed 9x5's and had thin loaves. HELP!
