Brussels Sprouts With Pomegranate and Pistachios
I have never met a vegetable that I did not like. Are you on the Brussels Sprout
band-wagon? I hope so. I wouldn't want you to be missing out on some healthy and
wonderful little cabbages. I could sit and eat an entire pan of these. Try them out -
and you will be a brussels sprouts fan just like me.
Brussels Sprouts with Pomegranate and Pistachios
one bag - brussels sprouts
1 small onion, diced
1/2 cup chicken broth
2 tablespoon olive oil
2 tablespoons butter
salt and pepper
2-3 tablespoons brown sugar
pomegranate seeds
1/2 cup pistachios - toasted
1) Prep your brussel sprouts and heat the pan with oil. Place sprouts & onion in oil
and cook for about 5 minutes. Add salt and pepper. Stir in the broth and continue to
cook until tender. Put in the butter and brown sugar in and melt. Serve when tender
but not over cooked. Place in a serving dish and top with pomegranate seeds & nuts.
NOTE - Crumbled bacon on top would be a great addition. YUM

ReplyDeleteI am addicted to brussel sprouts! I made 4 lbs of them for turkey day :) I cooked mine with bacon. But your recipe sounds awesome!
ReplyDeleteSounds like a great recipe! My mother in law and I were just joking on Thanksgiving that we would like to make a Brussels Sprouts recipe but we would be the only ones to eat them! I actually love them roasted but I am going to try your way too! Thanks for sharing!

oh just beautiful, now how do you get your hubby who won't eat brussel sprouts to eat brussel sprouts? I mean can we think of a name for this dish other than brussel sprouts? I have no problem with lying to him:)

ReplyDeleteI love the colors, and seriously any way you can make brussel sprouts better is fine by me! I love them, but people just give me the "wtf" expression and it's so tragic!! But with Pom? Done.
