Skillet Creamed Corn


            I have a deep deep love for side dishes, do you ? During the holiday meals it's
           what I look forward to the most and this dish was no exception. How can you go
           wrong with skillet creamed corn and bacon. Be still my heart! I could eat this as a
           meal in it's self. Christmas is fast approaching and let this be on your holiday table.
           Add a little red and green bell peppers for the garnish and you have a gorgeous -
           festive dish. I love how easy this comes together and you will too. Enjoy!

                                                            Skillet Creamed Corn

          8 slices bacon or turkey bacon, chopped
          2 bags frozen corn, thawed
          1 medium onion, chopped
          1/2 red bell pepper, chopped
          1/2 green bell pepper, chopped
          4 ounces of cream cheese, cubed
          1/2 cup half and half
          2 teaspoons sugar
          1 teaspoon salt
          1 teaspoon pepper

     1) Cook bacon in large skillet until crisp, remove bacon, and drain on paper towels,
     reserving 2 tablespoons drippings in skillet. Set bacon aside.
     2) Saute onion and bell peppers until almost done, add corn and cook until for about
     5 min. Add cream cheese and half and half. Heat until creamy and sugar, salt and
     pepper. Top with bacon.

  2. Oh this does look delicious and I will be copying and saving! I've made a similar corn dish with the peppers but love the addition of the bacon.
