Watermelon, Feta and Mint Salad with Lime Dressing

                This salad has Summer written all over it. I think we all make a similar version
                of this. It's tried and true and the best part is how the dressing goes perfect with
                       it. Every bite is delicious. I like to serve this with grilled chicken.

                                       Watermelon, Feta and Mint Salad with Lime Dressing

                                                          4 cups cubed watermelon
                                                          7 ounces of arugula
                                                          4 ounces feta cheese
                                                          5 to 6 fresh mint leaves, chopped

                                                       Balsamic Lime Dressing

                                                       2 tablespoons balsamic vinegar
                                                       5 tablespoons olive oil
                                                       2 teaspoons honey
                                                       2 limes, juiced

                      1) In a large bowl place all of your salad ingredients and mix dressing and
                      pour over salad.

                                                            Drizzle me with balsamic =)
