Zucchini Bread with Pineapple and Golden Raisins
Hi there.....It's been awhile. I've been enjoying family time so much that it's been kinda
hard for me to log on to the computer. Such a good thing. I share with you today the
most moist and delish zucchini bread. Filled with pineapple and golden raisins. Fall is
just around the corner and that means lots of baking in my house. I'm day dreaming
of those wonderful smells. Have a cup of tea or coffee and enjoy a nice slice of bread.
Zucchini Bread with Pineapple and Golden Raisins
2 cups of shredded zucchini
1 ( 8oz ) can crushed pineapple
1 cup golden raisins
3 eggs
1 cup vegetable oil
2 teaspoons vanilla extract
3 cups flour
2 cups sugar
2 teaspoons baking soda
1/2 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon pumpkin pie spice
1 teaspoon salt
1) In a large bowl, combine the eggs, zucchini, oil, pineapple, raisins and vanilla.
Combine dry ingredients. Stir until just moist.
2)Preheat oven to 350 degrees. Grease 2 loaf pans and pour into pans. Bake for 45
to 50 minutes or until done.
