When you can make an entire dessert in one large mixing bowl...you know you have
a easy winner on your hands. That is my kind of sweet treat. You're gonna love this.
I love fruit desserts more than any other and when you have crust on top and bottom
it's kind of like having your own piece of heaven. Top it with some vanilla ice cream or
whipped cream and you have sent this over the top. Give it a try. You won't regret it.
Raspberry Crumb Bars
2 1/4 cups flour
3/4 cups brown sugar
1/2 cup sugar
1 1/4 cups quick oats
2 sticks unsalted butter, softened
1/2 teaspoon cinnamon
1/2 teaspoon salt
1 egg
1/2 teaspoon almond extract ( optional )
1 ( 10 ounce ) jar seedless raspberry jam
1) Preheat oven to 350 degrees and grease an 8 in square pan. In a large mixing bowl
Mix flour, brown sugar, white sugar, quick oats, cinnamon and salt. Once that is mixed,
with and electric mixer mix butter, egg and extract until mixture forms into little
crumbs. This might take a few minutes.
2) Reserve 2 1/2 cups of the crumb mixture for the top. Pour the rest of the crumb
mixture into the bottom of your 8 inch pan and press down. Add your jam and top
with the rest of your crumb mixture. Bake for 35 to 40 minutes.
" Note - you can use any jam flavor that you'd like "
I love when the jam bubbles to the top!
