about it, that just doesn't sit well with me and it's been this way since I was a little girl.
I've tried it over the years with hopes that my palette has changed and it has never ever
worked out, haha. I'd go to barbecues and see potato salad and would dream about
consuming it. Basically everything that has mayo in it. I make my own versions and try
to come up with other alternatives. Here is a healthy potato salad that is full of flavor.
Lemon Vinaigrette Potato Salad
3 to 4 pounds red potatoes, diced
2 lemons, juiced
1/2 cup olive oil
1 tablespoon red wine vinegar
2 tablespoons fresh parsley or dill
3 ounces of feta cheese, optional
1 teaspoon Italian seasoning
1 onion, chopped
salt and pepper
1) Boil potatoes and onion for 20 minutes or until tender.Drain potatoes and place in a
bowl. Mix lemon, oil, vinegar, parsley, Italian seasoning, salt and pepper. Pour over
potatoes and mix. Add feta.
