Caprese Panzanella
To me - there is nothing better than this panzanella salad. This is a great meal to serve
when you have company coming over or just great for your family. Serve with a great
glass of wine. A perfect vegetarian dinner. Easy and incredibly yummy.
Caprese Panzanella
1 loaf Italian bread, cubed
1 pint cherry tomatoes
1 container mozzarella
fresh basil
3 to 4 tablespoons olive oil
1 teaspoon salt
balsamic glaze - for drizzle ( I bought mine at Trader Joe's )
1) In a large skillet heat olive oil. Place bread in skillet add salt, cook until a little crispy.
2) In a large bowl add bread, tomatoes, mozzarella and basil. Sprinkle with salt, olive -
oil and balsamic glaze.
