Brown Rice Bowl with Roasted Vegetables and Chicken

                     What I have for you here is a healthy and easy rice bowl. Recently I've been
                          obsessed with brown rice. It has a great texture and is pretty hearty.

                          When you roast vegetables it makes them so amazing and flavorful.

                                 Brown Rice Bowl with Roasted Vegetables and Chicken

                                                                      Chicken -

                                                                      4 boneless chicken breasts
                                                                      2 tablespoons olive oil
                                                                      1 teaspoon paprika
                                                                      1 teaspoon cumin
                                                                      salt and pepper
                                                                      1 lime, juiced
                                                                      1 tablespoon soy sauce


                                                                       1 bag frozen corn, thawed
                                                                       1 small bag baby carrots
                                                                       1 bundle asparagus
                                                                       1 bag fresh green beans
                                                                        honey - teriyaki sauce - parmesan cheese

                                                                        Rice -

                                                                        2 cups brown rice - cooked according to box

        1) Preheat oven to 425 degrees. On a rimmed cookie sheet add all of your vegetables
        except the corn. Drizzle with olive oil & season with salt and pepper. On the carrots
        I like to drizzle honey and on the asparagus and green beans I drizzle with teriyaki
        sauce. Roast until tender but still a little firm. Carrots will cook 10 minutes longer.

        2) Meanwhile cook your rice according to directions and let it sit. In a large skillet,
        add olive oil and place chicken in pan. Add lime juice, soy and all the seasoning.
        Cook until done. Take chicken out of pan and cut into chunks.

        3) In the same skillet that you just cooked your chicken in add the thawed frozen
        corn and cook until done.

        4) All you need to do is assemble. I place the brown rice in a bowl, veggies along
        the edge, chicken and corn in the middle. I like to drizzle everything with soy sauce
        in the end. But you can use anything you'd like. Adding fresh parmesan in the end
        is super yummy, too.

            Note - you can use whatever vegetables you'd like. If you like jasmine rice use that.
           There are no rules. Just a fun idea of how to eat everything in one bowl.
