Glazed Turkey Meat Loaf
Do you know how hard it is to photograph meat loaf??? I think I made it pretty?
I got the recipe from Tyler Florence's cookbook, it's his wife's recipe
and let me tell you....it's the best meat loaf I've ever had. Using Turkey made
it light and wonderful. I made roasted potatoes and asparagus to go along. A great
Spring meal.
Glazed Turkey Meat Loaf
2 slices soft white bread, torn into pieces
2 cups whole milk
1 yellow onion, diced
1 cup diced thick-cut bacon, plus 6 to 8 strips
2 garlic cloves, minced
2 pounds ground turkey breast
1 large egg
3 tablespoons ketchup
2 tablespoons Worcestershire sauce
2 tablespoons salt
Glaze
1 cup ketchup
1/2 cup Dijon mustard
1 cup light brown sugar
1) Preheat oven to 350. Line a baking sheet with parchment paper. Combine the
bread and milk in a small bowl and set aside for several minutes.
2) In a medium skillet, saute the onions, diced bacon and garlic over medium heat
for 10 minutes or until cooked, scrape the mixture into a large bowl and allow to
cool 10 minutes.
3) Add the ground turkey, milk soaked bread ( discard any remaining milk) egg,
ketchup, worcestershire and salt to the bowl with the onions and mix well.
Divide the mixture in half and form each portion into oblong mound on the
prepared baking sheet. Top with bacon strips.
4) make the glaze..In a small saucepan, combine the ketchup, mustard and brown
sugar and bring to a boil, stirring frequently. Use a pastry brush to paint a thick
layer of glaze onto each bacon-wrapped meat loaf. Bake for 1 hour.
Girl.... you SOOOOO made that look good!

I have never eaten meatloaf, but this actually sounds good. Minus the ketchup. Can you do it sans ketchup?

I made this for dinner last night. It had a great flavor and the guys loved it. The only issue I had with it was the fact that the sauce kept the bacon, on the outside of the meatloaf, from crisping up. So it was rather rubbery. I think that I am going to try cooking it without the sauce, until the bacon crisps, then add the sauce. Have you had this issue too?
