Sweet Potato Fries with a Maple-Marshmallow Dip


       I have a secret to tell you....come closer. I'm completely addicted to Sweet Potato
   fries. This is a true story. I have no self control when they are on the menu at any one
   of my favorite restaurants. Hey, I figure they are better for you than regular fries, right?
   This was my first attempt at making home-made ones and I wonder what took me so
   long? They are great and the sweet dip makes it fun. You can use your favorite dip.

                                            Sweet Potato Fries with a Maple-Marshmallow Dip

     5 sweet potatoes, cut into 1/4 inch pieces
     olive oil
     salt and pepper
     cinnamon - optional

     Preheat oven to 450 degrees.

     Line a baking sheet with parchment paper. In a bowl coat sweet potatoes with oil.
     Season with salt and pepper. Spread sweet potatoes on baking sheet and do not over-
     crowd or they will get soggy. Keep them in a single layer. Bake until golden. Flip
     them occasionally during baking. For the dip. I used 1/2 cup marshmallow ice cream
     topping mixed with 1 tablespoon maple syrup.

    You have NO idea how much I LOVE this post!! NO IDEA! I am so so so in love with sweet potato fries, it is crazy. My local fav. restaurant also serves some great salty, big and fat, potato fries and I am so addicted! I often wonder if I could allow myself eat two orders. (I know I could!) One order is a entire plate full! YUM!

    I make these all the time...except never tried it with a sprinkle of cinnamon...will have to do that! I always order them when we're out to eat too...they usually come with maple syrup. I will definitely be trying your yummy dip! It's lo-cal right?! :)

    Marshmallow dip? That's wild!! I don't know where to find marshmallow ice cream topping...I've never even heard of it. But I'm very curious now! I love sweet potato fries, they are the best :)
