Cheddar Shepard's Pie


                      Boy, Do I have a treat for you and it's just in time for St. Patricks Day!
               When I was a little girl my favorite meal was my moms Shepards Pie. I thought
                        I would give you an updated version of this great comforting meal.

                                                                Cheddar Shepard's Pie
 
                                                        For The Meat -
                                                        1 1/2 pounds ground beef or turkey
                                                        1 onion, diced
                                                        2 teaspoon minced garlic
                                                        1 can tomato paste
                                                        3 tablespoons worcestershire sauce
                                                        1 packet brown gravy
                                                        1 cup of water
                                                        1 1/2 cups corn
                                                        1 1/2 cups peas
                                                        4 sprigs fresh thyme leaves
                                                        salt and pepper
                                                        1/2 teaspoon garlic powder

                                                        For The Potatoes -
                                                        5 pounds yukon gold potatoes
                                                        1/2 stick of butter
                                                        5 ounces cheddar cheese
                                                        3 ounces cream cheese
                                                        3 tablespoons fresh chives

                 1)  In a large pot of salted water boil potatoes. In the meantime.
                 2) Brown ground beef, onion, thyme and  garlic at the same time. Add salt,
                 pepper and garlic powder. Put in the paste. Mix the brown gravy with one
                 cup of warm water and pour into meat mixture, add worcestershire sauce.
                 Cook for 7 minutes. Turn stove off and add the corn and peas mix and set aside.
                 3) Drain potatoes and add butter, cream cheese, cheese and chives. Mix.
                 4) Preheat oven at 350 degrees. Place meat on the bottom of a baking dish
                 and place the potatoes on top and bake for 20 minutes.

  37. This was perfect for St. Paddy's day. I substituted 1/2 of the potatoes for cauliflower and added a cup of carrots to the meat mixture too. I almost left out the cheese; I'm glad I didn't. It was delicious and a hit with my family. P.S. Your photography is awesome.

  41. We have tried various versions of this and they always call for tomato paste. Is there something that I can substitute for that? My family is really not crazy about the flavor of things with the paste in them. Just wondering??

  42. You can just leave the tomato paste out - My moms version does not have tomato paste in it and it's delicious.
