Chicken Parmesan



You can always tell a good Italian restaurant by their chicken parm.
For years, It's all I would order. I was rather obsessed with this dish.
Now, that I make my own for years. I never order it when I go out -
because mine is rather tasty. Pour a glass of pinot and slice some
bread and serve it with a side salad and dinner is served.

Chicken Parmesan

4 boneless chicken breasts, cut in half lengthwise and pounded
2 large eggs
1/3 cup milk
2 cups Italian bread crumbs
1 cup vegetable oil
2 to 3 cups marinara sauce
1/3 cup parmesan cheese
1 1/2 cups shredded mozzarella
salt and pepper
garlic powder
Fresh parsley for garnish

1) Preheat oven to 350 degrees. In a bowl mix milk and eggs together.
Put the bread crumbs in a large plate. Season chicken with salt, pepper
and garlic powder. Dip the chicken in egg mixture and then in bread
crumbs and set aside in a plate. 

2) Heat oil in a skillet over medium high heat. Once oil is heated.
Add chicken and cook for about 7 to 8 minutes or until golden brown
on each side. Drain on paper towels.

3) Add half the sauce in the bottom of a pan and then add the chicken
add the rest of the sauce and top with parmesan cheese. Cover with
foil and bake for 30 minutes. Remove from oven and top with mozzarella
and bake uncovered for 7 to 10 minutes.

4) Now dinner is served. Sprinkle with parsley and your favorite pasta.
