Nothing says, Valentine's Day like Red Velvet!! I made a few batches
of cupcakes this morning. The first batch was cupcakes in liners and
the second batch, I put in these cute containers to hand out to little
one's...cute, cute.
Today is my 100th post!! WooHoo! I have enjoyed blogging and am
looking forward to the next 100. I'm thinking about giving my blog
a little face lift! I was wondering what you would like to see more of?
My daily life? Food? House? Decorating? Places? What would you like
to see less of? You let me know! I'm here to serve ; ))
Red Velvet Cupcakes With Cream Cheese Frosting
2 1/2 cups of all purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons of cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tablespoons red food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract
Preheat the oven to 350 degrees and line 2 (12-cup) muffin pans with liners
In a medium mixing bowl, sift together the flour, sugar, salt and cocoa powder.
In a large bowl, gently beat together the oil, buttermilk, eggs, food coloring,
vinegar and vanilla with a handheld mixer. Add the sifted dry ingredients to
the wet and mix until smooth.
Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in the
oven for 20-22 minutes, turning the pan once, halfway through. Remove from
oven and let cool before frosting.
Cream Cheese Frosting
2 ( 8 ounce) packages of cream cheese, room temperature
2 sticks butter, room temperature
1 teaspoon vanilla
4 cups sifted confectioners sugar
In a large bowl, beat the cream cheese, butter and vanilla together until smooth.
Add the sugar and on low speed, beat until incorporated. Increase the speed to
high and mix until light and fluffy.

ReplyDeleteSo darling! You did a beautiful job with these. Red velvet always seems to please most people, I have found and the color is just lovely. Congrats on your 100th post. I won't presume to tell you what to do with your blog as I think that is a personal decision based on what is going in your life. Whatever you do will be perfect, I bet.

So, i popped over here and read your brief bio and you had me at coffee and carbs. Yes! oh, and Target. I don't read cookbooks, but I do read Pottery Barn catalogs as if they were a magazine. It takes me longer to read aPB catalog than an issue of People! I don't read cookbooks, probablly because I don't always follow a recipe. But, I love carbs so i will be back! laura
