Southwest Goulash



                         When I was growing up my mom would make a goulash that my dad
               loved more than anything in the world. It was something we looked forward too.
                   In New England we didn't call it goulash we called it American "Chop Suey"
                        I've lived in the South and California and no one calls it that. It's known
                              as goulash. No matter what name you call it. It is delicious.
               My mom's version was Italian. I thought I'd do a fun twist on hers. Thanks mom.

                                                               Southwest Goulash

               1 1/2 pounds ground beef
               1 pound elbow pasta
               1 1/2 cups beef broth
               1 can tomato sauce, 2 depending on what you like
               2 cans fire roasted tomatoes
               1/2 can green chilies
               1 tablespoon minced garlic
               1/2 jalapeño, optional
               1 1/2 cup corn
               1 onion, diced
               1 green bell pepper, diced
               1 1/2 cups cheese
               1 teaspoon oregano
               1 packet taco seasoning
               salt and pepper

           1) Boil water in pot and add salt.
           2) Meanwhile, add olive oil to pan and sauté onions and pepper. Cook 4 min.
           Add Garlic, taco seasoning, oregano, green chilies and meat.
           3) Once the meat is brown add broth, tomato sauce and tomatoes. Heat through.
           4) Drain Pasta, add sauce and corn.
           5) Stir in cheese, season with salt and pepper.
           6) Add any toppings, sour cream, cheese, green onions and crushed chips.

  3. Yum! Hubby would love this. He said his mom made goulash all the time (he's from MI). My mother on the other was not a great cook, so we called it Hamburger Helper (out of the box).

  4. My husband and I both grew up eating goulash. It's so funny when we talk because I think both our mothers made up their own concoctions all the time, which I love. I actually never make anything like this. Maybe I'll surprise my husband one night with this!! I think it's definitely a comfort food that will bring back good memories for both of us.

  5. Right after I met my husband he told me that he was making chop suey for dinner. I was impressed with his mad cooking skills and after more conversation, I was amazed and amused by what was considered chop suey in New Hampshire. Back in Louisiana my mom always called it goulash or "stuff", whether it was Italian flavored or chili Mac. Either way was delicious! You have made this one extra special, Val. It looks fantastic!

  7. It's funny I just had this convo with a cousin who lives in the mid west... He calls it Goulash... and I living in New Hampshire call it Chop Suey. Apparently us New Englanders have our own term for it since know one ever knows what I'm talking about!

  11. That's what I made last night for dinner; but I used WW macaroni and my own homemade pasta sauce with these lovely chunks of spicy sausage in it. OMG! It was mucho delish!

    I love goulash! Comfort food.

  12. I grew up eating Ghoulash. My grandmother made it for me all the time. Hers was the Italian Version, but this looks like a great twist on a classic. I can't wait to try it!

  21. I had the American Chop Seuy at Whole Foods before and while it was good, your version looks and sounds so much better!

  36. Goulash is such a yummy comforting pasta dish. I remember my mom always making it growing up! Now I LOVE this soutwest spin on it... anything with a mexican/southwest vibe to it makes me drool! Beautiful photos, too. I love your food presentation :)

  43. Is that one packet of taco seasoning? It's not listed on the ingredients but it is on the cooking directions.
