I love stuffed vegetables, whether it be stuffed zucchini or tomatoes,
it's fun and we tend to eat with our eyes first. It's a great way to get your kids
to eat their vegetables. These are stuffed with orzo and lots of cheese.
Serve these beauties with a side salad and breadsticks.
Stuffed Peppers with Turkey and Orzo
1 lb ground turkey
1 onion
4 to 5 garlic cloves minced
2 cups cooked orzo
1 large jar marinara sauce
1 cup shredded mozzarella
1/2 cup parmesan cheese
salt and pepper
1/2 teaspoon red pepper flakes
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon italian seasoning
1) Preheat oven to 350 degrees.
2) Heat a skillet with olive oil and cook onion until soft add garlic and coo
for about 3 minutes. Add ground turkey and cook until done. Add sauce
and spices. Take off of heat and add cheeses. Stuff 6 peppers.
Note - At this point I like to top each pepper with extra sauce and
cheese. Bake for 40 to 45 minutes.
I agree, stuffed vegetables are amazing. I love the way the veggie absorbs the flavors from the stuffing. These are so pretty
