Spicy Italian Sausage and Tortellini Soup with Spinach
I've been making this soup for years. Sometimes, I add different vegetables and
at times I use sweet sausage, you can mix it up to your taste. Add vegetable -
broth or chicken...Literally, this is so simple, hearty and very comforting.
Wouldn't you love a bowl of this on a chilly night? Don't forget some crusty
bread for dunking. You won't regret it.
Spicy Italian Sausage and Tortellini Soup with Spinach
1 package cheese tortellini ( I used bertolli )
4 hot Italian sausage links, casings removed
1 onion, diced
1 green bell pepper, diced
4 garlic cloves, minced
2 ( 26 ounce ) containers beef stock
1 cup water
2 ( 15 ounce )cans diced tomatoes
1 ( 15 ounce ) can tomato sauce
3 carrots, sliced
1 zucchini, diced
1 bag fresh baby spinach
1 1/2 teaspoons italian seasoning
garlic powder and pepper
fresh parmesan cheese and parsley for topping
1) In a large pot saute onions, peppers and carrots in olive oil for about 10 to 12
minutes. Add Sausage and garlic and cook until done. Drain fat and put back in
pot. Add your spices at this point and your broth, tomato sauce and diced tomatoes.
Bring to a boil, reduce heat and simmer on low for 30 minutes.
2) Add zucchini and tortellini and cook for 10 minutes. The last 5 minutes of cooking
add your spinach and stir. Serve with parmesan cheese and fresh parsley.
How yummy is tortellini? Its total comfort and is amazing in soup. This looks delicious. Perfect for a cold day

Thank you SO much for the measurements. I took your ingredients list to the grocery store with me this weekend but only bought one 8 ounce can of sauce!! So when I saw you updated with more specifics I panicked cause I didn't have enough. Thankfully I had another 8 ounce can hanging out in the back of one of my cabinets! YAHOO!
