Shrimp Scampi with Linguine


            If you like simple, easy, elegant and down right delicious. I have a perfect recipe
                   for you. It's a all time favorite of mine, that my entire family enjoys.


  I just made this the other day and seeing this image is making me crave it all over again.

Shrimp Scampi With Linguine
1 pound fresh shrimp or 1 pound uncooked frozen peeled and deveined ( thawed )
1 box linguine
1 stick of butter
8 tablespoons olive oil
4 shallots, minced
5 garlic cloves, minced
1 teaspoon red pepper flakes
1 cup of white wine or chicken broth
2 lemons, juiced
salt and pepper to taste
1 cup freshly grated parmesan cheese
fresh parsley

1) Salt water and cook linguine. In a saucepan melt 4 tablespoons butter and
4 tablespoons olive oil. Cook shallots, garlic and red pepper flakes until
onions are soft. Season shrimp with salt and pepper and add the to pan and 
cook 3/4 of the way. Then take them out and sit aside. Add white wine and
lemon juice to the pan and bring to a boil.

2) Then add remaining butter and olive oil. When combined add shrimp
back into the pan with parsley.

3) Mix sauce and shrimp to the linguine. Add a cup of parmesan cheese.


Serve with a loaf of crusty bread and a nice glass of pinot.
