Bow Tie Pasta with Broccoli and Feta


   Are you still sticking to your New Years resolutions? I'm not looking for perfection, just
   a happy balance. I still want to eat a cupcake once in awhile and balance it out with a
   sensible dinner. I try to incorporate broccoli into as many means as I can. I like it raw but
   feel I can eat more of it if it's slightly cooked. This is a great simple weeknight meal.

                                                        Bow Tie Pasta with Broccoli and Feta

                                                        1 box bow tie pasta
                                                        1 large head of broccoli - cut into florets
                                                        8 ounces of feta cheese
                                                        1 lemon, juiced
                                                        1 tablespoon oregano
                                                        1/2 teaspoon red pepper flakes
                                                        1/4 teaspoon salt and pepper
                                                        1/2 cup chicken broth
                                                        parmesan cheese to sprinkle on each plate (optional)

     1) Boil water for pasta, make sure to salt your water once water starts to boil. Add pasta
     and cook until al dente....during the last few minutes of cooking pasta add the broccoli
     to the pasta and cook for about 4 minutes or until tender.

     2) Drain pasta and broccoli and add to your pot. Add broth, lemon juice, oregano,
     red pepper flakes, salt and pepper, and feta cheese.

     I like to serve this with grilled chicken and a crusty loaf of bread. You can add in any
     thing you'd like to this dish. Enjoy. Be sure to sprinkle extra red pepper flakes,
     parmesan cheese and a lemon wedge on each plate for maximum flavor.

  7. Looks delicious! I love broccoli and usually have it in stir fries so I'll have to try your pasta recipe!
    I didn't make and solid resolutions this year, but I guess I've been trying to incorporate more fruit and veggies into my diet - so far so good!
