Skillet Spiced Corn


           This is nothing more than a simple side dish. Sometimes sides can be rather boring.
           When you throw some corn in a skillet and add some spices it just comes to life.
            It goes perfect with steak, ham, chicken and a side of potatoes or rice. So good.

                                                                    Skillet Spiced Corn

                                                                         1 ( 16 ounce ) bag of frozen corn, thawed
                                                                         1 teaspoon cumin
                                                                         1 teaspoon paprika
                                                                         1/2 teaspoon garlic powder
                                                                         1/2 teaspoon onion powder
                                                                         1/2 teaspoon salt and pepper
                                                                         1 tablespoon olive oil
                                                                         1 tablespoon butter
                                                                         the juice of one lime ( optional )
                                                                         fresh parmesan cheese, topping

          1) Heat skillet with olive oil and butter, add thawed corn in skillet and cook for a
          couple minutes add all of your spices and stir until combined. Cook until done.
          This process takes about 7 minutes. Add lime juice and stir, top with parmesan.

          Note - this recipe is perfect when fresh corn is not in season. But in the summer
          you can still use this recipe for corn on the cob. Just add extra butter and no oil.

  8. I love spicing up frozen corn in the winter! The addition of parm is wonderful.

    BTW, my blog has been hacked :( Waiting for Blogger to sort things out and unlock it. Same thing happened to numerous blogs recently - same culprit from what I hear. Sad people out there.
