Fajita Pita's

This is such an easy way to eat fajitas!! Cook and stuff into a
Pita. My kids loved eating these! Enjoy.

3 chicken breasts, cooked and sliced
1 steak, cooked and sliced
1 red bell pepper, sliced
1 green bell pepper, sliced
1 large red onion, sliced
1 can diced tomatoes
2 garlic cloves, minced
1 fajita seasoning packet
1/2 cup mexican cheese
whole wheat pita's, cut in half
salt and pepper

Season steak and chicken on both sides with salt, pepper and
half of the Fajita packet. Heat skillet add some olive oil cook
steak and then chicken. Set aside and slice.
In the same skillet add bell peppers, onion, diced tomatoes,
garlic, the other half of the fajita seasoning . Cook until tender
add cheese. Stir in the sliced meat to the veggies and mix.
Place mixture inside pita and serve with sour cream, cheese
and salsa.

My baby is 5 today!






Today is my precious girl turned 5 years old. It's been a very bitter
sweet day. This child brings so much joy in my life.

Here is a list of very important thing's in Avery's life right now!

* She love's Disney Princesses but Ariel is her favorite and she told
me 2 months ago that her name was no longer Avery Madison and I
now need to call her by the name Avery Ariel "this makes me giggle"
* She is obsessed with squinkies and carries a 100 of them in a ziplock
bag and they go every where with us. Pic above of what they look like.
* Her favorite book is, One Fish, Two Fish, Red Fish, Blue Fish. She
pretty much reads the entire book with me.
* She still loves her pink blankie she has had since birth and can't go
to bed at night with out it.
* Life right now is all about the color pink and that's why I made you
a 3 tier pink birthday cake.
* Her favorite movie's are The little mermaid and Despicable me.
* She eats sushi...."makes me so proud"
* Love's to dance and sing. We just bought kids bop and she likes it a lot.
* Very outgoing and says hello to everyone.
* When anyone tells her she is cute..her reply is I'm gorgeous!! hehe
* Favorite foods at the moment..spaghetti with meat sauce, apples,
grapes, PB&J and all sweets.

Avery, I love watching you-I love your curly hair-I love the way your
blue eyes sparkle-I love how your little voice melts my heart-
I love the little spaces between your teeth- I love that your sassy-
I love everything about you-I love that you call me momma, It's the
best feeling, ever! You are my girl and I love you.

FOREVER 21 Loot

I love expensive jewelry just like every other girl....But, I don't
like wearing it everyday...for the fear of losing it. I never can
walk past a Forever 21 store. They have the best inexpensive
jewelry. The above pic is what I bought the other day. I think
it's time you head on over to the mall and buy yourself some

Red Velvet....If you please.


Nothing says, Valentine's Day like Red Velvet!! I made a few batches
of cupcakes this morning. The first batch was cupcakes in liners and
the second batch, I put in these cute containers to hand out to little
one's...cute, cute.

Today is my 100th post!! WooHoo! I have enjoyed blogging and am
looking forward to the next 100. I'm thinking about giving my blog
a little face lift! I was wondering what you would like to see more of?
My daily life? Food? House? Decorating? Places? What would you like

Red Velvet Cupcakes With Cream Cheese Frosting

2 1/2 cups of all purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons of cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs, room temperature
2 tablespoons red food coloring
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract

Preheat the oven to 350 degrees and line 2 (12-cup) muffin pans with liners
In a medium mixing bowl, sift together the flour, sugar, salt and cocoa powder.
In a large bowl, gently beat together the oil, buttermilk, eggs, food coloring,
vinegar and vanilla with a handheld mixer. Add the sifted dry ingredients to
the wet and mix until smooth.

Divide the batter evenly among the cupcake tins about 2/3 filled. Bake in the
oven for 20-22 minutes, turning the pan once, halfway through. Remove from
oven and let cool before frosting.

Cream Cheese Frosting

2 ( 8 ounce) packages of cream cheese, room temperature
2 sticks butter, room temperature
1 teaspoon vanilla
4 cups sifted confectioners sugar
In a large bowl, beat the cream cheese, butter and vanilla together until smooth.
Add the sugar and on low speed, beat until incorporated. Increase the speed to
high and mix until light and fluffy.

I love L.A.













I really do love L.A...I love everything about it. The good, bad
and ugly!! There is no other city that makes me feel quite like
Los Angeles. It has everything you want and need. I thought I

Marrrllleeyyy

My name is Marley and I'm a very cute and mischievous little
boy!! My oldest daughter who is a huge animal lover saw this
dog online and had to have him. I was not convinced, I never
grew up with animals and never really saw myself having a dog.
He was born in Palm Springs and it was a little bit of a drive to
get him and when the breeder said he could drive to us...I thought
to myself that, it was meant to be. We took one look at him and
knew that he belonged with our family! His little face makes the
days better and he is family!!

Sweethearts Bark


The other day I was dreaming about Valentine's Day and trying
to come up with new and creative ways to show my children how
much I love them. A light bulb went off and that's when I created
this adorable bark "aka" LOVE bark. This would be a perfect
treat for your little one to bring to school. Enjoy!

Sweethearts Bark

1 package candy melts
1 package sweetheart candies

Melt the candy melts in microwave about 2 min. Take out and
pour into an 8x8 pan lined with parchment paper and assemble
hearts and refrigerate until hard. Break into pieces and place in
bags.

Cheesecake Waffle Cups

This dessert is simplicity at it's finest! I love when you can whip
sweets treats without ever having to turn on the oven!

Cheesecake Waffle Cups
1 package ( 8 ounce) cream cheese, softened
1 can ( 14 ounce) sweetened condensed milk
1/3 cup lemon juice
1 teaspoon vanilla extract
4 waffle bowls
1 cup cherry pie filling

In a small bowl, beat cream cheese until smooth. Gradually
beat milk until smooth. Stir in lemon juice and vanilla.
Spoon about 1/3 cup into each waffle bowl, top with 2
tablespoons pie filling. Repeat.

Italian Sub Dip

I love Football!!! I'm very passionate about my beloved New
England Patriots!! They lost last night, sniff sniff...But, that
did not stop me from enjoying this Hoagie Dip. I was flipping
through The Food Network magazine a couple weeks ago and
saw Mary Alice's Hoagie Dip and knew that it would be on my
football menu. I changed it up a little and it was like the best
Italian sub, you have ever had!! I barely had time to take this
picture because it went gone in an instant!!

Mary Alice's Hoagie Dip

1 medium red onion
3 pickled pepperoncini peppers
1/2 head iceberg lettuce
1 large tomato, halved and seeded
1/4 pound deli-sliced genoa salami
1/4 pound deli-sliced ham
1/4 pound deli-sliced turkey
1/4 pound deli-sliced prosciutto
1/4 pound deli-sliced provolone cheese
1/3 cup extra virgin olive oil
1 teaspoon dried oregano
1 1/2 teaspoons dried basil
1/2 teaspoon red pepper flakes
1 10 to 12 inch round loaf Italian bread
1 baguette, cut into pieces for dipping

1) Chop the onion, pepperoncini, lettuce and tomato
into bite size pieces. Dice the meats and cheeses.
2) Combine the chopped vegetables, meats and cheeses
in a large bowl. Add the olive oil, oregano, basil and red
pepper flakes and stir until everything is combined.
Refrigerate until ready to serve.
3) Carve out the center of the bread loaf to make a bowl
( don't cut through the bottom) and cut the scraps into
bite-size pieces. Serve the hoagie dip in the bread bowl,
with extra bread.

Cheesy Enchilada Soup

Can you hear that? This soup is calling your name!!!!!!
It's telling you....Make me, soon. Enchilada Soup is so
warm, comforting and delicious. These are the first
photo's taken with the new camera and I'm in love, big.
Make some corn muffin's and have a nice drink and
your meal with be complete!!!

Cheesy Enchilada Soup

1 1/2 pounds ground turkey
1 onion, chopped
1 yellow pepper, chopped
2 ( 15 ounce) cans tomato sauce
2 ( 10 ounce) cans enchilada sauce
1 ( 16 ounce) cans chili beans
1 ( 15.5 ounce) can great Northern beans, drained
1 1/2 cups of corn
1 ( 14.5 ounce) can diced fire-roasted tomatoes
1 tablespoon ground cumin
1/2 teaspoon of salt
2 cups shredded Monterey Jack cheese with peppers
Garnish with green onions, sour cream, cheese & corn chips.

1) In a large Dutch oven, cook ground turkey, onion and pepper
over medium-high heat.
2) Add tomato sauce, enchilada sauce, beans, corn, tomatoes,
cumin, and salt. Bring to a boil over med-high heat, reduce heat
and simmer 25 minutes. Add cheese, stirring until melted.
Garnish with sour cream, cheese, green onions, corn chips.

Well, hello.

I'd like to introduce you to my new BFF, she does not have
a name yet...but, I'm open to suggestions. For now, I just
call her pretty. She was an Christmas present from Santa.
It's been so much fun playing with her. I bought her a super
cute camera strap from Etsy, she like's it. I can't wait to show
you what we have been up to.

Peanut Butter Sandwich Cookies

I like to bake, I like to bake, a lot. I find it really just calms
my soul. I do most of baking late at night when the house
is quiet. I play some music and get into a zone. My kiddo's
are pretty picky, "long sigh" but, they love anything with
peanut butter in it. Peanut butter cookies being The King
of all cookies to my children. What's better than a peanut
butter cookie? A peanut butter cookie with filling in the
middle, of course.

Peanut Butter Sandwich Cookies
1 cup butter-flavored shortening
1 cup creamy peanut butter
1 cup sugar
1 cup packed brown sugar
3 eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
2 teaspoons baking soda
1/4 teaspoon salt

Filling
1/2 cup creamy peanut butter
3 cups confectioners sugar
1 teaspoon vanilla extract
5 to 6 tablespoons of milk

1) In a large bowl, cream the shortening, peanut butter
and sugars until light and fluffy. Add eggs, one at a time,
beating well after each addition. Add vanilla. Combine the
flour, baking soda and salt, add to creamed mixture and
mix well.
2) Shape into 1-inch balls and place 2 inch apart on ungreased
baking sheets. Flatten to 3/8-in. thickness with fork. Bake
at 375* for 7 to 8 minutes or until golden. Remove to wire
racks to cool.
3) For filling, in a large bowl, beat the peanut butter, vanilla,
confectioner's sugar and enough milk to achieve spreading
consistency. Spread on half the cookies and top each with
another cookie.

Salad Spaghetti

I would say that this spaghetti dish is the best of both
words. A mixture of greens and carbs. A win, win for
for us all. You will be amazed how good this is.

Salad Spaghetti

1 pound of spaghetti
4 tablespoons of olive oil
6 garlic cloves, minced
2 teaspoons fresh thyme leaves
1 small head of frisee lettuce
2 cups baby arugula
1/2 small head of radicchio, shredded
1 lemon, juiced
1/2 cup grated Parmesan cheese, grated
salt and pepper
3 tablespoons chopped fresh parsley
1/4 teaspoon red pepper flakes

Cook pasta in salted water, cook until done. Reserve
one cup of pasta water (for the sauce).
While the pasta is cooking, Heat olive oil in a large
skillet. Add the garlic and thyme to pan and cook for
5 minutes. Increase heat to med-high and add reserved
pasta water and add cooked pasta.
Add the frisee, arugula, radicchio, lemon juice, Parmesan
and a good sprinkle of salt, pepper and red pepper flakes.
Toss in pan until the veggies have wilted a bit.
Sprinkle with parsley and more parm.

Broiled Grapefruit

New Year, New You, Isn't that how the saying goes?
I like to always start the New Year off by eating a
tad better. Although, I will never stop eating my
beloved carbs. I like to have a happy balance in my
life. My goal this year is to eat more greens and to
drink more water. The touch of sugar on top of the
warm Grapefruit makes it sweet and tart. Enjoy!
My new favorite breakfast.


1 pink grapefruit
1 tablespoon sugar
1 tablespoon brown sugar
green grapes
blueberries

1) Cut the grapefruit, in half horizontally. With a sharp
knife, cut around each section to loosen fruit. Place
grapefruit halves, cut side up, in a baking pan.
2) Combine brown sugar and white sugar over grapefruit
and broil for 5 minutes.
3) For garnish, rinse grapes and blueberries and dip in
remaining sugar, Place on grapefruit, serve warm.
